Meet the Chef
From dishwasher to food truck owner, Phil’s journey has always been about sharing great food.
Phil’s story in the kitchen began at The Willow Place Inn in Hudson, Quebec—just outside of Montreal, where he grew up. He started as a dishwasher at 14 years old, soaking in the rhythm and rush of the restaurant world. From there, he worked his way up: busboy, line cook, server. Each step gave him a deeper respect for the craft and made food a meaningful part of his life.
That passion led him to study culinary arts at the École Hôtelière des Laurentides, where he graduated top of his class in 2012. After spending several years in the culinary industry, Phil shifted into sales, where he built strong people skills and learned the value of great service—skills that would one day come in handy again.
In 2016, Phil met Kathleen, and they started dating a few years later. They got married during the pandemic and together, they decided to make the leap into the food truck business. Kathleen is a huge part of the operation, supporting Phil in every step of the way, from the logistics to ensuring the food is always perfect.
Now based in Apalachin, NY, Phil and Kathleen run their food truck with one goal in mind: to serve food that’s comforting, honest, and full of flavor. Inspired by Phil’s Montreal roots, his culinary training, and their shared love of community, the truck is more than just a business—it’s a family dream in motion.
